  • For more than 15 years, Josefina Howard was the Executive Chef & Co-Owner of the original Rosa Mexicano on First Avenue near 58th Street in New York. Josefina's knowledge of regional Mexican cuisine and her dedication to providing genuine flavors and tastes quickly made Rosa Mexicano a destination for lovers of authentic Mexican cuisine. Today, guests at Rosa Mexicano continue to be the beneficiaries of Josefina's devoted search for the freshest ingredients and passionate immersion in a country and a "cuisine full of possibilities." Born in Cuba, Josefina Howard was raised in Spain and lived in France, Italy, Mexico and the United States.

  • Prior to joining Rosa Mexicano, Tom Dillon was the President and Chief Operating Officer of Patina Restaurant Group with more than 60 restaurants and food service operations in performing arts centers in major metropolitan cities on both the East and West coasts.

    Before PRG, Tom was President and COO at Richard Sandoval Restaurants, where he was responsible for the development and execution of the group’s global growth strategy and built the supporting operating infrastructure necessary to grow the business from 5 to 30 units.  Prior to that, Tom was President and CEO of Pret a Manger USA during which time he was able to double the size of the company and continues to serve on the company’s board of directors.

    Tom began his career at the Colgate Palmolive Company in New York where he served in a variety of finance and marketing positions. Tom holds a B.S. degree from Manhattan College and is a CPA.

  • Under his aegis, the brand has grown from a popular New York City restaurant near Sutton Place into 15 units in the U.S. that include two more in the city and such other locations as Washington, DC; Boston, Massachusetts; Riverside, New Jersey; National Harbor, Maryland; Atlanta, Georgia; Minneapolis, Minnesota; Los Angeles and San Francisco, California; and Miami, Florida. In addition, the group operates a Rosa Mexicano in Panama City, Panama and is opening franchises in Dubai and Puerto Rico. Doug and his partners also preside over Rosa Mexicano Kitchen, which manufactures and distributes Mexican specialty items to more than 5,000 retailers throughout the country and through online supermarket, Fresh Direct. He is a member of the National Restaurant Association and past President of the New York State Restaurant, Manhattan Chapter. Doug is also one of the founders and board members of the New York City Hospitality Alliance. He has served as President of the Columbus Avenue Business Improvement District (BID) since 1999 and is a board member of the Lincoln Square Business Improvement District (BID). He also has served on the board of his alma mater Marietta College and his son’s independent school.

  • Growing up in Los Angeles, Jason has always had a passion for cooking and dining.  From a young age, he gravitated to food service, starting in fast food and working as a server to pay his way through.  He attended the University of Southern California, where he received a BS in Business Entrepreneurship and Japanese, and later attended The Wharton School, where he received an MBA in Marketing. After many years with Houston's/Hillstone Restaurants, Jason joined Rosa in 2005 as Regional Director of Operations.  Jason helped grow the company from three to fifteen locations.  In 2010, Jason added Rosa Mexicano's beverage development and operations to his list of responsibilities and helmed an overhaul of the Rosa Mexicano cocktail program.  In 2011, Jason was promoted to COO, in which he currently oversees operations for the entire company.

  • A 25 year-plus veteran of the restaurant industry, Manny has led the Finance & Accounting groups of companies as diverse as Angelo & Maxie’s (Chart House Enterprises), McCormick & Schmick’s, and most recently the Einstein Noah Restaurant Group, a publicly traded fast casual franchisor and operator with 860 units. 

    Earlier experience includes flipping burgers at McDonald’s at the age of 15 and working his way up through the ranks – first at the local store, then through the corporate accounting group, supporting divisional and regional senior management;  Group Director of Finance & Cost Management for ACCO Brands, the office products division of Fortune Brands; and founder of Blame it on the Chef, a restaurant development company through which he owns and operates The Rivershore Bar & Grill in Oregon City, Oregon. 

     

     

     

  • Christian Plotczyk's love for the restaurant business began with his first back-of-the-house job when he was 14 years old, as a dishwasher for a neighborhood restaurant in his home state Massachusetts.  Since then, he has moved to Miami, FL and remained steadfast in the kitchen, pursuing his culinary career at respected Miami destinations such as the Avalon Hotel, executive chef at China Grill, and eight years at Asia de Cuba as their executive chef.  Christian then went on to spend four years as the culinary director for Kimpton brand hotels and restaurants before recently bringing his self-developed talent and passion for culinary excellence to the Rosa Mexicano family as the new Corporate Chef in February 2008.   Christian continues to inspire and develop the Rosa Mexicano brand with his extensive experience and unwavering talent.

  • Lesley comes to Rosa with more than a decade’s experience leading the marketing efforts of multi-unit, multi-national restaurant groups undergoing rapid growth. As Director of Marketing & Public Relations for Richard Sandoval Restaurants, a $100 million multi concept Latin restaurant group, she oversaw the development and implementation of the marketing strategy that supported the group’s operations as it grew from 5 to 35 units over 6 years.

    Hers is not the typical path to Marketing: Lesley holds a B.A. in Economics and Japanese from the University of Michigan (yes, she speaks Japanese), a diploma in Culinary Arts from the French Culinary Institute, was a Food Editor for Lifetime Magazine, and was a Management and IT Technology Consultant with PricewaterhouseCoopers in Tokyo.
