  • For more than 15 years, Josefina Howard was the Executive Chef & Co-Owner of the original Rosa Mexicano on First Avenue near 58th Street in New York. Josefina's knowledge of regional Mexican cuisine and her dedication to providing genuine flavors and tastes quickly made Rosa Mexicano a destination for lovers of authentic Mexican cuisine. Today, guests at Rosa Mexicano continue to be the beneficiaries of Josefina's devoted search for the freshest ingredients and passionate immersion in a country and a "cuisine full of possibilities." Born in Cuba, Josefina Howard was raised in Spain and lived in France, Italy, Mexico and the United States.

  • Prior to joining Rosa Mexicano, Tom Dillon was the President and Chief Operating Officer of Patina Restaurant Group with more than 60 restaurants and food service operations in performing arts centers in major metropolitan cities on both the East and West coasts.

    Before PRG, Tom was President and COO at Richard Sandoval Restaurants, where he was responsible for the development and execution of the group’s global growth strategy and built the supporting operating infrastructure necessary to grow the business from 5 to 30 units.  Prior to that, Tom was President and CEO of Pret a Manger USA during which time he was able to double the size of the company and continues to serve on the company’s board of directors.

    Tom began his career at the Colgate Palmolive Company in New York where he served in a variety of finance and marketing positions. Tom holds a B.S. degree from Manhattan College and is a CPA.

  • Under his aegis, the brand has grown from a popular New York City restaurant near Sutton Place into 15 units in the U.S. that include two more in the city and such other locations as Washington, DC; Boston, Massachusetts; Riverside, New Jersey; National Harbor, Maryland; Atlanta, Georgia; Minneapolis, Minnesota; Los Angeles and San Francisco, California; and Miami, Florida. In addition, the group operates a Rosa Mexicano in Panama City, Panama and is opening franchises in Dubai and Puerto Rico. Doug and his partners also preside over Rosa Mexicano Kitchen, which manufactures and distributes Mexican specialty items to more than 5,000 retailers throughout the country and through online supermarket, Fresh Direct. He is a member of the National Restaurant Association and past President of the New York State Restaurant, Manhattan Chapter. Doug is also one of the founders and board members of the New York City Hospitality Alliance. He has served as President of the Columbus Avenue Business Improvement District (BID) since 1999 and is a board member of the Lincoln Square Business Improvement District (BID). He also has served on the board of his alma mater Marietta College and his son’s independent school.

  • Lesley comes to Rosa with more than a decade’s experience leading the marketing efforts of multi-unit, multi-national restaurant groups undergoing rapid growth. As Director of Marketing & Public Relations for Richard Sandoval Restaurants, a $100 million multi concept Latin restaurant group, she oversaw the development and implementation of the marketing strategy that supported the group’s operations as it grew from 5 to 35 units over 6 years.

    Hers is not the typical path to Marketing: Lesley holds a B.A. in Economics and Japanese from the University of Michigan (yes, she speaks Japanese), a diploma in Culinary Arts from the French Culinary Institute, was a Food Editor for Lifetime Magazine, and was a Management and IT Technology Consultant with PricewaterhouseCoopers in Tokyo.
