Rosa Mexicano’s Culinary Advisor


Jonathan Waxman will join Rosa Mexicano as Culinary Advisor for 2012, where he will collaborate with our culinary team on our Flavors of Mexico program, featuring seasonal menu celebrations throughout the year.  In addition, Chef Waxman will lend inspiration to new and exciting menu items as well as invigorate some traditional favorites.  We look forward to welcoming Chef Waxman and his rare blend of culinary talent, integrity and personal passion for Mexican cooking and ingredients.

Growing up in El Cerrito, CA, Mexican food has been Chef Waxman’s go-to comfort food, cooking it for his family and using it as inspiration throughout his career.  His favorite snack, fresh, slightly spicy guacamole makes him a natural fit for our Culinary Advisor at Rosa Mexicano, where we are known for our Guacamole in Molcajete, freshly made tableside. 

Called a 'culinary comet' by the New York Times, Chef Waxman began his culinary training in France at La Varenne.  Back in the United States, his culinary genius landed him in the kitchen of prestigious restaurants such as Chez Panisse and Michael's in California. In 1984, he introduced his signature California style to the east coast, with the opening of the celebrated restaurant: Jams.  He has been the chef-owner of various other acclaimed restaurants and today is chef and owner of Barbuto in New York City, author of cookbooks “A Great American Cook” and “Italian My Way,” and was a recent contestant on Bravo’s Top Chef Masters.

As Culinary Advisor, Waxman will share in our commitment to deliver authentic, inspired Mexican cuisine faithful to traditional roots while incorporating his signature market-fresh approach.  As part of our Flavors of Mexico program, he will help us celebrate the many distinct and layered cuisines of Mexico.  We invite you to stimulate your mind, cultivate your palate and discover Rosa Mexicano’s Flavors of Mexico.  Buen Provecho!
